Three Delicious Main Dishes for Your Arthritis Gout Diet

If gout has you feeling down, one of the best ways you can gain a more positive mental outlook is to focus on creating and enjoying a tasty arthritis gout diet.  Like many other health conditions, there are certain foods that can trigger gout attacks and make gout worse.  Foods that can lead to gout are those high in purines and include organ and red meats, sardines, anchovies, shellfish, sweet breads, legumes, gravy, creamy sauces, etc.

Unfortunately, foods high in purines may be many of the foods you once enjoyed.  However, just because you have to avoid or eliminate some of the foods you love from you diet, doesn’t mean that you can’t enjoy gout-friendly foods.  There are many excellent recipes that you can try to improve your eating enjoyment.

The following are three healthy gout friendly recipes that you can try and add to your recipe box:
Stuffed Zucchinis (courgettes)

5 -8 zucchinis (should be about 7-8 inches long)
4 medium-sized tomatoes finely chopped
1 cup almonds finely ground
1 cup rice, rinsed
1 large onion finely chopped
4 cloves garlic crushed
2 tablespoons fresh coriander leaves finely chopped
4 tablespoons parsley finely chopped
1 teaspoon oregano
1/8 teaspoon cayenne
½ teaspoon allspice
1 ½ teaspoon salt
1 teaspoon pepper
4 tablespoons melted butter
2 cups tomato juice mixed with ½ teaspoon salt and ½ tsp pepper
Cut off the stems of the zucchini and reserve.  Next, core the zucchini and set the zucchinis aside.
Combine the rest of the ingredients - except the tomato juice – into a bowl and mix to make the stuffing.
Stuff zucchinis and close with inverted stem ends.  Arrange the stuffed zucchinis snuggly in a saucepan and place inverted plate over top.  Add tomato juice and sufficient water to cover the plate and bring to a boil.
Cover saucepan and cook over medium heat for 40 minutes, or until stuffing is fully cooked. 
When cooked, remove from heat and serve immediately while the stuffed zucchinis are still hot.
Serves 8 people.

Chilled Summer Pasta Salad

8 ounces pasta noodles (I.E. macaroni, shells, bowtie, tube, spiral)
½ tomato chopped
½ bell pepper chopped
¼ cup olives chopped
2 ounces Parmesan cheese grated
2 eggs boiled, discard 1 yolk
1 ounce vinegar
2 ounces & 1 tablespoon canola oil

Cook noodles according to package instructions.
Drain noodles, add 1 tablespoon canola oil, toss, and chill
In a large bowl, combine the rest of the ingredients and mix well with a large spoon.
Add the chilled pasta to bowl, mix, and serve.

Serves between 4 and 6 people.

Tomato Vegetable Soup

1 medium peeled carrot chopped into pieces
1 large onion finely chopped
1 large potato peeled and diced into cubes
4 medium tomatoes chopped
2 cloves garlic crushed
1 tablespoon fresh ginger grated
1 cup coriander leaves finely chopped
1 teaspoon cumin
1/8 teaspoon cayenne
2 teaspoons salt
1 teaspoon pepper
4 tablespoons olive oil
5 cups water

In a saucepan, heat olive oil and stir-fry garlic, ginger, onion and carrots on medium heat for 5 minutes.
Add tomatoes, potatoes, and chopped coriander leaves and stir-fry for an additional 5 minutes.
Add the rest of the ingredients and bring the entire mixture to a boil. 
Cover the saucepan and simmer the soup on a medium-low heat for one hour, or until vegetables are thoroughly cooked.  If necessary, add more water.
If not served immediately after simmering is finished, allow to cool before refrigerating and reheat the soup thoroughly (but don’t let it boil) before serving.

Serves up to 8 people.
